For Chef’s Choice, we created a Mediterranean-inspired dish featuring eggplant and short ribs. We marinate the short ribs in Spanish spices, and then fill the eggplant with the short ribs. Next, we slow-roast the stuffed eggplant in a Canarian red mojo sauce in an oven (set below 130 degrees for two hours.

A typical Spanish dish with Spanizh garbanzo beans sautéed with a traditional sausage, Sobrasada Mallorquina Iberica, and flavored with a touch of smoked paprika.
Slow-roasted eggplant stuffed with marinated short ribs cooked in a low oven (temperature under 130 degrees) for two hours in a base of Canarian red mojo sauce. Served with wrinkled potatoes and chives.
