Chickpeas are fun to work with, and during certain times of the year we can buy them fresh and green. Our menu is based on classic middle eastern dishes cooked and plated in a modern style. Teamed with Byblos favorites, we created original dishes for Estrella Damm’s Chef’s Choice.
Lamb served with merguez, bone marrow lablabi (a classic chickpea stew), and spinach
Beef carpaccio with charred eggplant paired, labneh, and sumac onions
Halva paired with a sesame wafer, white chocolate cream, and date molasses
