Bolivar presents a fusion of many South American cuisines with an emphasis on Colombia. This menu includes a variation on one of our signature dishes, Pabellon Sifrino. In this case, we mixed garbanzo hogao (an onion and tomato sofrito) with pulled beef. Our flavors and seasoning combinations have no boundaries.
